After living in Japan for 2 years I had the opportunity to learn what real asian cuisine was. Before that all I had to go on was those typical fast food Chinese places you see all over, you know? The ones that typically include all or one of these names: Hunan King West East Wu Tang Cant Drive For Shit So No We Don’t Deliver Palace. So I began experimenting with simple asian recipes most of which include meat but I substitute with veggies or meat alternatives. My favorite dish happens to be the simplest to make aside from the white rice which they serve with everything. Spring rolls are a quick healthy snack or party platter that you can surprise your friends with! I recently wanted to show off my cooking skills to a certain someone so I decided to throw on my Rice Queen Crown and make a vegetarian asian feast which included: Veggie Orange Chicken and steamed broccoli, Miso Soup, Spring Rolls with Peanut Sauce, Wine, and for dessert a Strawberry Jalapeño smoothie (Dessert was far from asian but so DAMN good!)…..and yes, all his bowls were SQUARE! so when I couldn’t scoop anymore soup up I said “Don’t judge me!” and I picked up the bowl and slurped the rest of the soup directly from the bowl haha …Im so romantic!
Below Ive posted a simple recipe for Vegetarian Spring Rolls
- Springroll Wrappers
- 1/2 cup bean sprouts
- 1/3 head of green cabbage, chopped (I used Romain Lettuce)
- 5 green onions, chopped
- 1 cup thin noodles, pre-cooked and chopped down to 1in pieces (use rice, Chinese or bean thread noodles)
- 1/4 cup fresh herbs (I used cilantro, basil and mint…your choice)
- 1/4 cup carrots, grated or julienned
- 1 tbsp lime juice
- 1 tbsp soy sauce
- 1/2 tsp fresh ginger, grated
- And your favorite dipping sauce I use Peanut Sauce because its AWESOME!
Preparation: Toss together all ingredients together except wrappers in large bowl. Submerge spring roll wrappers in hot water until pliable, about 15 seconds. Place about 2 tablespoons of mix on wrapper and wrap your spring rolls. Serve with dipping sauce and enjoy!
